Sweet Potatoes...Not Just for the Holidays!

Sweet Potatoes are North America’s gift to the world. They were a major food source for early settlers and Revolutionary War soldiers. The sweet potato is a powerhouse of nutrients, full of Vitamins A and C and also calcium and potassium. The tubers increase in sweetness as they are stored and also as they are cooked. Think outside the holiday box and serve them year-round.
This bisque is satisfying and incredibly delicious. Enjoy!
Sweet Potato Bisque
- 1 tbsp. margarine
- 1 ¼ cup onions, chopped
- 1 clove garlic, minced
- 1 tbsp. ground coriander
- 1 tsp. curry powder
- 1/8 tsp. ground cumin
- 4 cup low-sodium chicken broth
- 1 ¾ cup sweet potatoes, cooked and mashed or cooked and pureed in a food processor.
Use plain yogurt, light sour cream, orange marmalade or apricot preserves for garnish. The combination of smooth soup and sweet or piquant garnish is fabulous!
In 3-quart saucepan, melt margarine. Sauté onions and garlic about 5 minutes until onion is just wilted. Add spices; stir and heat a few seconds. Pour in broth; heat to boiling. Stir in mashed potatoes and heat through. Ladle into individual soup bowls or a tureen and add garnish on top. Makes 4 servings.
