Most of these are inspected\n\n\n\n\n  twice a year using the State of Delaware Food Code, a science-based regulation similar to the national model from the US Food and Drug\n\n\n\n\n  Administration. The inspections assure the food is being handled properly from preparation through serving. Inspectors observe kitchen\n\n\n\n\n  worker\u2019s food handling practices, make sure equipment is working properly, take food temperatures, inspect refrigerators and storage\n\n\n\n\n  areas, and measure water temperatures and sanitizer levels. If a problem is found, the manager is shown the correct procedure.\n\n\n\n\n<\/p>\n\n\n\n\n<ul>\n\n\n\n\n  <li>Unsafe food sources &#8211; such as food not processed by a regulated, inspected plant\n\n\n\n\n  <\/li>\n\n\n\n\n  <li>Inadequate cooking &#8211; such as food not cooked to the required temperature\n\n\n\n\n  <\/li>\n\n\n\n\n  <li>Improper holding &#8211; such as food not kept hot or cold enough before being served\n\n\n\n\n  <\/li>\n\n\n\n\n  <li>Contaminated equipment &#8211; such as not sanitizing food contact surfaces\n\n\n\n\n  <\/li>\n\n\n\n\n  <li>Poor personal hygiene &#8211; such as food workers not properly washing their hands\n\n\n\n\n  <\/li>\n\n\n\n\n<\/ul>\n\n\n\n\n<p>\n\n\n\n\n  The following report listing shows the date of the most recent food safety inspection and which Food Code &#8220;critical&#8221;\n\n\n\n\n  requirements, if any, were out-of-compliance at the time of the inspection.\n\n\n\n\n<\/p>\n\n\n\n\n<ul>\n\n\n\n\n  <li>\n\n\n\n\n    <strong>Priority and Priority Foundation Violations &#8211;<\/strong> those practices that are more likely to increase the risk of a foodborne\n\n\n\n\n    illness &#8211; that is, these involve the risk factors mentioned above: source, cooking, holding, contamination and personal hygiene.\n\n\n\n\n  <\/li>\n\n\n\n\n  <li>\n\n\n\n\n    <strong>Core Violations &#8211;<\/strong> which are not displayed, involve important retail practices such as facilities maintenance and\n\n\n\n\n    general sanitation, but are less likely to contribute to foodborne illness.\n\n\n\n\n  <\/li>\n\n\n\n\n  <li>\n\n\n\n\n    <strong>&#8220;None&#8221; &#8211;<\/strong> when entered in the Violations column indicates that there were no Violations observed during the\n\n\n\n\n    inspection on the date listed.\n\n\n\n\n  <\/li>\n\n\n\n\n<\/ul>\n\n\n\n\n<p>\n\n\n\n\n  Additional Information on Food Establishment Inspections and Reports can be found in the <a href=\"\/dph\/hsp\/feirfaq.html\" title=\"Food Establishment Inspections and Reports - Frequently Asked Questions\">Food Establishment Inspections and\n\n\n\n\n  Reports &#8211; Frequently Asked Questions<\/a>\n\n\n\n\n<\/p>\n\n\n\n\n<p>\n\n\n\n\n  To obtain information about a food establishment through the Freedom of Information Act (FOIA), <a href=\"http:\/\/delaware.gov\/help\/foia_request.shtml?subj=DHSS\">please follow this link to the Request for information form<\/a> .\n\n\n\n\n<\/p>\n\n\n\n\n<p><strong>\n\n\n\n\n  The Food Establishment Inspection Report Listing is available in a web-based table.
